I’m in the market for a commercial paper cutter, large format and was wondering if there are any printers out there that can recommend some brands and models. We will primarily be doing business cards and brochures.

Well, you need to know the maximum size you will need to cut. If you will be getting parent sheets from your vendor then what sizes ie(23 x 35 or 26 x 40) or will you just be cutting your finished product. Here are a few things to consider;
Commercial cutters for the printing industry are expensive because they are hydraulic. You can get cheaper ones that are not and they are called Guilliotine Cutters.
Blades will need to be sharpened periodically. Services are available to do this but it is not an instantaneous service. So, you will need extra blades.
Beware of used cutters. A lot of the time they have problems that you will not be able to fix easily. Like, being out of square.
Some names; Polar cutters & Challenge cutters are the most well known. You can contact local printing equipment dealers for some prices.
